Val’s Favorite Pumpkin Muffins

There’s something about autumn that makes me crave the comfort of baking. The scent of warm spices filling the kitchen feels like an embrace—and the best part is sharing that comfort with others. These pumpkin muffins are one of my go-tos this time of year: simple, cozy, and almost impossible to mess up. Perfect for a crisp morning with coffee, an afternoon snack, or even a thoughtful little treat to bring to a friend.

I like to think of these as “At Home with Val” muffins—classic enough to be familiar, but with just a little unexpected twist that makes them special.

At Home with Val Pumpkin Muffins

Ingredients

• 1 ¾ cups all-purpose flour

• 1 cup canned pumpkin puree

• ¾ cup brown sugar

• ½ cup neutral oil (vegetable, canola, or melted coconut oil)

• 2 large eggs

• 1 tsp baking soda

• ½ tsp baking powder

• ½ tsp salt

• 1 tsp cinnamon

• ½ tsp nutmeg

• ½ tsp ground ginger

• ¼ tsp cloves

• 1 tsp vanilla extract

My “At Home with Val” Twist:

• A sprinkle of flaky sea salt and ground black pepper on top before baking (brings out the flavor and feels elevated).

• Optional: stir in ½ cup dark chocolate chunks or chopped candied ginger for an extra layer of indulgence.

Instructions

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners (or lightly grease).

2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.

3. In a large bowl, whisk pumpkin puree, sugar, oil, eggs, and vanilla until smooth.

4. Gently fold the dry ingredients into the wet until just combined—don’t overmix.

5. Divide batter evenly among muffin cups (about ¾ full).

6. Sprinkle each muffin with flaky sea salt (and a few extra chocolate chunks on top if you added them).

7. Bake 20–22 minutes, until a toothpick comes out clean.

8. Cool slightly before serving (though I can never resist one while still warm).

Serving Idea:

Pair these muffins with a cup of spiced tea or coffee, and if you’re feeling extra, serve them on your favorite little plate with a napkin that feels seasonal. It’s these small gestures that make everyday moments feel special.
